PASTA & POLENTA

The 28 day experiment is coming to an end and we have discovered that we enjoy whole grain pasta and polenta.

I use polenta to make a lasagna type dish. Layers and everything using thinly sliced polenta in place of the noodles. Polenta on the bottom, followed by tomato sauce (all veggie) followed by grilled veggies of your choice, followed by cheese on top. Yummy and healthy.

Whole grain pasta has become a favorite with the whole gang. I cook it up like regular pasta and pile a variety of veggies, that have been roasted in olive oil, on top. Roast veggies on a cookie sheet at 450 degrees for about 10 minutes. I use a little garlic and crushed fresh basil, too. The family eats it up.

Dessert? I wash and cut up strawberries, blueberries, raspberries and blackberries and throw them in a bowl and drizzle honey lightly over the top and gently stir. Addison, Shae and Hope can't get enough of this new favorite dessert.

Who knew we'd like eating a little more healthy.
